Now this soup is one of our best Christmas traditions. Though my children are grown and circumstances are better they still love to come home to share in this delicious meal.<\/p>\n<h3 class=\"blue-lines\">Ingredients<\/h3>\n<table border=\"0\" cellpadding=\"1\" cellspacing=\"1\" style=\"width: 600px;\">\n<tbody>\n<tr>\n<td valign=\"top\" width=\"300\">3 lbs. onions, diced<\/td>\n<td valign=\"top\">1 Tbsp. instant coffee<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 \u00bd Tbsp. butter<\/td>\n<td valign=\"top\">salt and pepper<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">3 c. beef broth<\/td>\n<td valign=\"top\">croutons<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">3 c. chicken broth<\/td>\n<td valign=\"top\">mozzarella cheese, sliced<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<h3 class=\"blue-lines\">Preparation<\/h3>\n<p>1. Saut\u00e9 onions in butter.<\/p>\n<p>2. Transfer onions to large saucepan. Add beef and chicken broths, coffee, and salt and pepper to taste. Simmer for several hours.<\/p>\n<p>3. Then pour soup into individual oven-proof bowls. Top each bowl with croutons, then mozzarella cheese.<\/p>\n<p>4. Bake at 350\u00b0F for about 25 minutes.<\/p>\n<p><strong>*Note:<\/strong> To make croutons, slice day-old French bread and broil for 3\u20134 minutes or until golden brown, turning each minute.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I made this for my young family at Christmas when money and time were tight.
