\n\t\t\t4 seedless oranges<\/td>\n<\/tr>\n
1 head romaine lettuce, washed, dried and torn into bite-size pieces<\/td>\n<\/tr>\n
Sweet Serrano-Lime Dress (recipe follows)<\/td>\n<\/tr>\n
\u00bd c. toasted, sliced almonds<\/td>\n<\/tr>\n
\n\t\t\tDressing<\/strong>
\n\t\t\t1 c. sugar<\/td>\n<\/tr>\n
\u00bd c. lime juice<\/td>\n<\/tr>\n
\u00be c. olive oil<\/td>\n<\/tr>\n
\u00bc c. vegetable oil<\/td>\n<\/tr>\n
1-2 serrano chilies, stemmed (some or all seeds and membranes removed for less heat)<\/td>\n<\/tr>\n
Pinch of salt<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

Preparation<\/h3>\n

Salad<\/strong>
\n1. Cut tops and bottoms from oranges; discard. Remove white pith with a sharp knife, and cut orange segments free from membranes.<\/p>\n

2. Divide chilled lettuce among eight plates. Arrange orange segments on top of lettuce.<\/p>\n

3. Drizzle with dressing (see below), and garnish with almonds. Serve immediately.<\/p>\n

Dressing<\/strong>
\n1. Put all dressing ingredients in a blender; puree.<\/p>\n

2. Taste and adjust seasonings as desired. Chill until ready to use.<\/p>\n

3. Dressing will keep, covered and refrigerated, for 1 week. Makes 2 cups.<\/p>\n

Serves 8.<\/strong><\/p>\n
