We love the food there, so I was inspired to tweak the flavor of a traditional squash soup with Thai seasonings. This spectacular orange soup with green gremolata and red sriracha makes a great dinner with an Asian-style salad of shredded cucumber and carrot with sesame oil and vinegar dressing. For a feast, you can even add pork dumplings or spring rolls.<\/p>\n<h3 class=\"blue-lines\">Ingredients<\/h3>\n<p>\u00bd c. chopped cilantro<\/p>\n<table border=\"0\" cellpadding=\"1\" cellspacing=\"1\" style=\"width: 1000px;\">\n<tbody>\n<tr>\n\t\t<\/tr>\n<tr>\n<td valign=\"top\">\u00bd c. chopped peanuts<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 Tbsp. finely shredded lime peel<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 butternut squash (about 2 lbs.), sliced in half lengthwise and seeded<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 Tbsp. olive oil<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">salt and pepper<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 Tbsp. vegetable oil<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\u00bc c. finely chopped onion<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\u00bc tsp. crushed red pepper<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">2 c. chicken broth<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 14-oz. can unsweetened coconut milk<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 Tbsp. packed brown sugar<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">1 Tbsp. fish sauce<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">2 Tbsp. lime juice<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">Sriracha, to taste<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<h3 class=\"blue-lines\">Preparation<\/h3>\n<p><strong><em>Make the gremolata:<\/em><\/strong><br \/>\nIn a small bowl, stir together cilantro, peanuts and lime peel. Set aside.<\/p>\n<p><strong><em>Make the soup:<\/em><\/strong><br \/>\n1. Preheat the oven to 400\u00b0. Rub the squash with olive oil and season with salt and pepper. Place halves facedown in a 13 x 9-inch baking pan to which you\u2019ve added \u00bd cup of water. Roast until fork tender, about 40 minutes. Set aside to cool, about 10 minutes.<\/p>\n<p>2. In a large soup pot, warm vegetable oil over medium heat. Add onion and crushed red pepper; saut\u00e9 until onion is translucent, about 4 minutes.<\/p>\n<p>3. Using a large spoon, scoop the roasted squash into the pot, add the chicken broth, coconut milk, brown sugar and fish sauce; stir to blend well. Bring to a gentle boil, reduce heat and simmer \u00bd hour, stirring often.<\/p>\n<p>4. Using an immersion blender, blend soup until smooth and creamy. Taste for seasoning, adjusting as needed. Stir in the lime juice.<\/p>\n<p>5.
