Lunch hour is crazy at SAME Caf\u00e9<\/a>, the 40-seat restaurant my husband, Brad, and I run in Denver.<\/p>\n

Between cooking, serving, chatting with regulars and overseeing our staff, I hardly get a chance to eat. One day a woman in her fifties dressed in a business outfit strode in. \u201cHi, Libby,\u201d she said.<\/p>\n

I did a double take. Wow, she\u2019s come a long way<\/em>.<\/p>\n

The first time she came to the caf\u00e9 almost two years ago, she didn\u2019t have money to pay for a meal. No problem. Like many customers, she volunteered to work. After a bowl of Brad\u2019s white bean spinach soup and a slice of apple, pecan and bleu cheese pizza, she washed dishes and swept. Look at her now. I stole a glance at Brad, in the kitchen. Wasn\u2019t this what we\u2019d hoped for?<\/p>\n

In 2003, on a flight home from Texas, we\u2019d hatched this crazy dream. I was a teacher and Brad worked in IT. We\u2019d both done a lot of volunteering at soup kitchens. It was something we felt called to do, feeding the poor. If only it weren\u2019t so dispiriting at times.<\/p>\n

\u201cRemember the creamed peas we had to make?\u201d I asked Brad. Big industrial cans of peas we mixed with flour\u2014the end result looked like wallpaper paste. Probably tasted like it too. The guests didn\u2019t seem any more inspired than we were. They sat at tables eating off of trays, nobody saying a word. \u201cI wish we could start our own place.\u201d<\/p>\n

\u201cWhy don\u2019t we?\u201d Brad said. \u201cSomething more like a restaurant where people wouldn\u2019t mind hanging out.\u201d<\/p>\n

We started jotting down ideas, me on a cocktail napkin, Brad in the margin of a magazine. \u201cWe\u2019ll have a menu,\u201d I said.<\/p>\n

\u201cHealthy food, fresh organic vegetables,\u201d Brad added. He was the cook in our house, and a good one too.<\/p>\n

\u201cNo cash register,\u201d I said. \u201cJust a donation box on the counter.\u201d<\/p>\n

It would be a charity, but we didn\u2019t want our diners to think of it as a charity. \u201cIf a customer can\u2019t pay,\u201d Brad said, \u201che can help wash dishes or mop the floor.\u201d<\/p>\n

Brad signed up for culinary classes at night and I began looking for possible venues. Right away we hit hurdles. \u201cThere\u2019s no such thing as a free lunch,\u201d one potential landlord sniffed. \u201cYou seem like nice kids, but you\u2019re crazy to think this will ever work.\u201d<\/p>\n

I met with brokers, contractors and suppliers, only to watch them walk away, shaking their heads. Was our idea that unrealistic? Lord, you\u2019re going to have to clear the way here. We can\u2019t do this on our own. <\/em><\/p>\n

No bank would lend us the money to open a restaurant with no cash register. The only way we could get funds was to cash in thirty thousand dollars from our IRA\u2014almost everything we had.<\/p>\n

\u201cMaybe we should just forget about this,\u201d I said to Brad one night.<\/p>\n

\u201cLibby, this is something we believe in. We\u2019ve gotta do it.\u201d<\/p>\n

Finally, a landlord agreed to lease us space on Colfax Street. We put flyers around the neighborhood, asked friends to spread the word, and held our breath.<\/p>\n

Our first customer was a woman in her forties. She told me she was recently divorced and she and her two kids had no place of their own. \u201cCould I have a salad?\u201d she asked. I brought her a plate of greens with fresh fruit and nuts. Her eyes grew wide. \u201cThese are the first fresh vegetables I\u2019ve had in four months,\u201d she exclaimed. That alone made our struggles to open the caf\u00e9 worth it.<\/p>\n

Word traveled fast, thanks to stories in the papers and on TV. Soon we had more than 50 customers a day. \u201cWhat do I owe you?\u201d one patron asked.<\/p>\n

\u201cWhatever you think the meal\u2019s worth,\u201d I said, \u201cwhatever you can afford.\u201d A few ate without paying or donating an hour of work. But most gave what they could, even if it was just a dollar.<\/p>\n

At first Brad and I kept our day jobs. It was the only way to make ends meet. Then a funny thing happened. People from all walks of life started coming: lawyers, doctors, architects. They came for Brad\u2019s cooking. But they also liked what our caf\u00e9 stood for.<\/p>\n

SAME is an acronym. It\u2019s short for our credo: So All May Eat. Those with money gave, and then some. One of our customers left a check for five hundred dollars. Another bought one thousand dollars in gift certificates. Still another donated a truck so we could haul produce from organic suppliers. Eventually we were able to quit our day jobs and work full-time at the restaurant.<\/p>\n

Our dream is coming true. We serve healthy food to people in need. We treat everyone with dignity. We hoped to develop a sense of community\u2014the feeling that God had drawn us together, the comfortable and the poor, so that we might help one another. The woman in business attire was one of them.<\/p>\n

Something was different about her that day. Something besides her outfit. She stopped at the counter and ordered greens with sun-dried tomatoes and goat cheese, and a ham and pineapple pizza.<\/p>\n

\u201cI have something to tell you,\u201d she said. \u201cThe last time I was here, I started talking to a woman I\u2019d met here before. She said, \u2018There\u2019s an opening in my office. Why don\u2019t you come in and apply?\u2019 I did\u2014I got the job!\u201d I knew what was different about her\u2014confidence. Hope.<\/p>\n

\u201cI\u2019m so happy for you,\u201d I said.<\/p>\n

She opened her purse. \u201cI can pay now. How can I ever thank you?\u201d<\/p>\n

\u201cYou just did,\u201d I said.<\/p>\n
